500g whole chicken
200g beef for stew *optional
100g carrot
50g celery
Bunch of parsley
100g okra
20g long grain rice
50 ml yoghurt
3 egg yolks
Salt
Juice of ½ lemon
1. Soak the okra in boiled water and set aside.
2. Wash and cook the rice for about 10 minutes. Drain and set aside.
3. Wash the chicken and place in the deep pot. Add salt, cleaned vegetables, cover with cold water and start cooking on lower fire for about 20 minutes or until the meat starts falling off the bones.
4. When the meat is cooked, remove the bones, pour the soup through the sieve and chop the meat and vegetables.
5. Add the rice and okra to the soup and cook for another 5-10 minutes.
6. Add lemon juice and salt if necessary.
7. Remove from the stove and cool slightly.
8. Beat the egg yolks with yoghurt till nicely combined. Add to the soup.
9. Sprinkle with fresh parsley and leave to rest for another 10 minutes before serving.
